SCRAMBLED JOHNNY G’S
 To add some southern flavor to your breakfast, just add a bit Johnny G’s to your eggs.  Here is my typical preparation:
Ingredients:
- Four (4) eggs
- 1 tablespoon of Johnny G’s Rib Rubs
- ¼ cup of diced red/green pepper
- 1 slice of American cheese
Preparation:
- Break four (4) eggs into a bowl (you may remove the yolks)
- Add 1 tablespoon of Johnny G’s Rib Rubs
- Mix thoroughly
- In a non-stick pan lightly sauté ¼ cup of diced red/green pepper
- Add the egg & Johnny G’s mix
- Add 1 slice of American cheese
- Fold mixture until desired texture or until cheese is melted.



RIB-RUB BURGERS, ON-THE-LEANER SIDE
 This is a great way to add some variety to your, otherwise, normal burgers
Ingredients:
- 1.5 pounds of 90% lean ground beef (the 90% lean will mitigate the flame-ups that will caramelize/burn the seasonings found within Johnny G’s Rib Rubs)
- 1.5 pounds of ground turkey
- 1 cup of diced black olives
- 1 cup of diced red/green pepper
- 1/3 cup of Johnny G’s Rib Rubs
Preparation:
- Mix the 1.5 pounds of 90% lean ground beef with the 1.5 pounds of ground turkey
- Add 1 cup of diced blank olives and 1 cup of the diced red/green pepper
- Add 1/3 cup of Johnny G’s Rib Rubs
- Mix thoroughly
- Make patties and grill to you liking. (For extra zing, sprinkle both sides of the patties with Johnny G’s during grilling)
- Served best with liberal helpings of Black & Tans during the grilling step.



GORGONZOLA RIB-RUB BURGERS
 Another great way to spice up the summertime standard ‘burger’.
Ingredients:
- 1.5 pounds of 90% lean ground beef (the 90% lean will mitigate the flame-ups that will caramelize/burn the seasonings found within Johnny G’s Rib Rubs)
- 1.5 pounds of ground turkey
- 1 cup of crumbled gorgonzola cheese
- ¼ cup of snipped parsley
- ¼ teaspoon of coarsely ground pepper
- 1 egg and 1 egg white
- 1/3 cup of Johnny G’s Rib Rubs
Preparation:
- Mix the 1.5 pounds of 90% lean ground beef with the 1.5 pounds of ground turkey
- Add 1 cup of crumbled gorgonzola cheese
- Add the ¼ cup of snipped parsley
- Add the ¼ teaspoon of coarsely ground pepper
- Add the 1 egg and 1 egg white
- Add 1/3 cup of Johnny G’s Rib Rubs
- Mix thoroughly
- Make patties and grill to you liking.



JOHNNY’S CHILI RUBBIN’
 This chili can be made using any of the Johnny G’s Rib Rubs, but the New Mexican Heat is the most widely used.
Ingredients:
 - 3 lbs ground beef
 - 1 large onion
 - 1 red pepper
 - 1 green pepper
 - 4-7 crushed gloves of garlic
 - 3, 28 oz. Cans of petite diced tomatoes
 - 2, 6 oz. Cans of tomato paste
 - 3 Tablespoons of chili powder
 - 2 Tablespoons of ground cumin
 - 2, 15 oz cans of dark red kidney beans
 - 2, 15 oz cans of lima beans
 - ½ cup of Johnny G’s Rib Rub
 - 1 tsp salt
 - ½ tsp of coarsely ground pepper
Preparation:
 - Brown the ground beef, then rinse under hot water in a colander to remove the excess fat.  Note: for more zest mix, to your tastes, Johnny G’s Rib rub into the ground beef prior to browning.
 - In a large pot combine the beef with the diced onion, red pepper, green pepper, 7 crushed gloves of garlic (number of cloves to your taste)
 - Sauté for 10 min.
 - Add the 3, 28 oz cans of petite diced tomatoes
 - Add the 2, 6 oz tomato paste
 - Add 1 teaspoon of salt
 - Add ½ tsp of coarsely ground pepper
 - Add 3 Tablespoons of chili powder
 - Add 2 Tablespoons of ground cumin
 - Add ½ teaspoon of red pepper
 - Add ¼ cup of sugar
 - Add ½ cup of Johnny G’s Rib Rub
 - Bring to a boil then reduce the heat and simmer an hour, stirring occasionally.



RUBBIN’ BEEF BARLEY SOUP
 Beef barley soup is a great combination of high protein, low fat and carbohydrates to really warm your toes in the wintertime.
Ingredients:
 - 2 1/2-3 lbs beef tips or stewing beef
 - 2 tablespoons of extra virgin oil
 - 7-9 cups of beef broth
 - 1 16 oz can of petit diced tomatoes
 - 1 large onion
 - 1 1/2 teaspoons salt
 - 1 teaspoon of dried basil
 - 1 teaspoon of Worcestershire sauce
 - 1 cups of sliced carrots
 - 2 cups of sliced celery
 - 1 1/4 cups of quick-cooking barley
 - 1 green pepper, finely diced
 - 1/4 cups of snipped parsley
 - ¼ cup of Johnny G’s Rib Rub
Preparation:
 - In a large pot, brown the beef tips, rinse under hot water in a colander to remove the excess fat.
 - Stir in the beef broth, and then add all the other ingredients.
Simmer for about an hour after it all comes to a boil, stirring occasionally



JOHNNY’S ‘FULL-OF-IT’ STUFFED FILET OF SALMON
 Johnny G’s Rib Rubs aren’t limited to ribs, and can add some great flavor to any type of fish.
Ingredients:
 - 1-2 lbs Salmon filet
 - ½ of lemon
 - 4 Tablespoons of diet margarine or butter
 - Extra virgin olive oil
 - 1 slice of whole wheat bread**
 - 1 cup of mixed nuts (type of your choosing)
 - ¼ cup of Johnny G’s Rib Rub
Preparation:
 - On a cutting board, slice open the filet so that it opens like a book
 - Coat the inside and outside with a light coating of extra virgin olive oil, then set aside on a greased cookie sheet.
 - Finely blend the 1-cup of mixed nuts and the 1 slice of whole grain wheat bread.
 - Add the 4 Tablespoons of the margarine/butter
 - Place the stuffing mixture inside the salmon filet and then close the filet.  If more stuffing is available it may also be placed on the topside of the filet.
 - Sprinkle the topside of the filet with the ¼ cup of Johnny G’s Rib Rub and then gently squeeze the juice of ½ lemon onto the surface of the filet.
 - Salt and pepper as desired.
Broil the filets according to their thickness or until the filets ‘flake’ with a fork drawn at a 45 deg angle.

** Optional, although this meal is already very low on the glycemic index, you may choose to leave out the bread.



RUBBIN’ MY MEAT LOAF
 Johnny G’s meat loaf is a great way to ensure your dinner guests believe you can create ‘magic’ in the kitchen.
Ingredients:
 - 1 ½ lbs ground beef
 - 1 large onion
 - 1 red pepper
 - 4-7 crushed gloves of garlic
 - ½ cup of chopped bacon bits
 - 5-8 slices of sun dried tomatoes, finely diced
 - 1 egg and 1 egg white
 - 1 tsp salt
 - ½ tsp of coarsely ground pepper
 - 1 cup of finely diced walnuts or pecans
 - ½ teaspoon of ground sage
 - 1 teaspoon of dry mustard
 - ½ cup of Johnny G’s Rib Rub
Preparation:
 - Combine all the ingredients in a bowl, mixing completely
 - Place in a meatloaf dish and place in oven at 350 deg for about 50-60 minutes



JOHNNY’S TUNA LOG
 Johnny G’s Tuna Log makes the perfect pastry finger food for your favorite sports event.
Ingredients:
 - 1 lbs stone ground wheat pizza dough (or any raw pizza dough as available)
 - ½ lbs of Broccoli florets
 - 1 medium yellow onion
 - 3 cups of mozzarella & provolone mixed cheese
 - 2, 6oz cans of solid white albacore tuna in spring water
 - 2 egg whites
 - 2 tablespoons of butter
 - 1 ½ Tablespoon of Johnny G’s Rib Rub
Preparation:
 - Roll out the pizza dough 14-16” wide, 1/16-1/8 thick for as long as it will go.
 - Using extra virgin olive oil, lightly stir-fry the Broccoli florets and the finely diced onion until the onion is clear and the Broccoli turns vibrant green. Then set aside to cool.
 - After draining the water from the 2 cans of solid white albacore tuna, empty them into a large mixing bowl.
 - Add to the mixing bowl the stir-fried Broccoli and onions.
 - Add 1 ½ Tablespoons of Johnny G’s Rib Rub
 - Add 3 cups of Mozzarella & Provolone mixed cheese
 - Add the two egg whites and mix thoroughly
 - Apply ¼ of the Tuna mixture to the rolled out pizza dough.
 - Fold the mixture over with the dough, slice off from the rest of the rolled out dough and fold the ends under.  Repeat for the other ¾ of the mixture.
 - Place each Tuna log on a greased cookie sheet allowing at least ½ inch between the logs for the dough to rise during cooking.
 - Melt 2 tablespoons of butter and baste the top of each tuna log.
Place the cookie sheet in a preheated oven set at 350 deg F.  Cook for approximately 30 minutes or until the dough is golden brown.  Remove from the oven and cut the Tuna logs into 2-3” lengths and serve.  Note: recipe makes 4, 12”long x 2” diameter logs, which serves 2 persons.



RUBIN CHICKEN STIR-FRY
 Johnny G’s Chicken Stir-Fry is a nice blend of southern barbeque and the orient.  This dish is super fast to make and is a very health blend of seasonings and oils.
Ingredients:
 - 1 lbs of cooked chicken breast meat, cubed
 - 3/4 lbs of oriental snap peas
 - 1 medium yellow onion, diced
 - 2 cups of bean sprouts
 - ½ cup of water chestnuts
 - 1, medium sized green pepper, diced
 - 1, medium sized red pepper, diced
 - 2 Tablespoon of sesame oil
 - 2 Tablespoons of Extra Virgin Olive Oil
 - 4 Tablespoons of Kikkoman Lite soy sauce
 - 1 Tablespoon of sesame seeds
 - 2 Tablespoon of Johnny G’s Rib Rub
Preparation:
 - Heat a skillet with the 2 Tablespoons of Sesame oil and 2 Tablespoons of Extra Virgin Olive Oil.
 - When skillet and oil or hot, add everything BUT the 2 Tablespoons of Sesame seeds.
 - Quickly stir-fry the contents, continuously mixing for 2-4 minutes or until the vegetables just begin to change color.
 - Remove from the heat and dish.
 - Gently sprinkle each dish with the Sesame seeds and serve.
This dish can serve 3-4 persons.



JOHNNY G’s ZUPPE CHICKIANO (Johnny G’s chicken soup)
 This is a great winter warmer barbeque / spicy chicken soup.
Ingredients:
 - 1 lbs of cooked chicken breast meat, cubed
 - 7-9 cups of chicken broth
 - 1 large yellow onion, diced
 - 1 large red onion, diced
 - 1, medium sized green pepper, diced
 - 1, medium sized red pepper, diced
 - 1, 16 oz can kidney beans
 - 1, 16 oz can of lima beans
 - 1 cup of sliced carrots
 - 2 cups of sliced celery
 - 1 teaspoon of salt
 - 1, 16 oz can of petit diced tomatoes
 - Several twists of freshly ground pepper
 - 1/2 cup of Johnny G’s Rib Rub
Preparation:
 - In a large kettle or saucepot, add all the ingredients together.
 - Being to a boil and then simmer for 45 minutes.
 - Side each bowl served with fresh (preferably hot) rosemary & olive oil sour dough bread and enjoy.
This dish will serve 3-4 people.



JOHNNY G’s LOCO TACO’S
 This is a great combination of Johnny G’s to create a great Tex-Mex favorite.
Ingredients:
 - 1 lbs ground beef
 - 1 dozen stone ground wheat wraps (Taco’s may also be used)
 - 1 large yellow onion, diced
 - ½ teaspoon of chili powder
 - 2 cloves of garlic, minced
 - 1, 16 oz can of Mexican stewed tomatoes (may also use petit diced tomatoes)
 - ½ head of shredded iceberg lettuce
 - 2 cups of shredded mozzarella & sharp cheddar cheese
 - Several shots of Tabasco sauce
 - ¼ cup of Johnny G’s Rib Rub
Preparation:
 - Brown the ground beef, then rinse under hot water in a colander to remove the excess fat.  Note: for zestier mix, to your tastes, Johnny G’s Rib rub into the ground beef prior to browning.
 - In a large skillet combine the beef with the diced onion, chili powder, garlic, Johnny G’s and the Tabasco sauce.
 - Sauté on a medium heat for 5-8 min.
 - Add the Mexican stewed tomatoes and cheeses, sautéing until the cheese melts.
 - Add the lettuce to a helping of the sauté to a wheat wrap.  (To wrap, fold a side in, fold the bottom up, and then roll the last side in.  Eat from the opened top end.)
This dish will serve 2-3 people.



KABOB RUBBIN’
 Add Johnny G’s to these seafood kabobs to add sum special favors.
Ingredients:
 - ½ lb of large bay shrimp, shelled.
 - ½ lb of tuna, cut into 1 inch cubes
 - 1 large red onion, diced into large 1 inch cubes,
 - 1 large green pepper, diced into large 1-inch cubes.
 - ¼ cup of Extra Virgin Olive Oil
 - ½ cup of Johnny G’s Rib Rub
Preparation:
 - Skewer the shrimp, tuna, onion, and peppers.
 - Lightly baste each skewer with the Olive Oil.
 - Gently sprinkle each skewer with Johnny G’s Rib Rub and rub in as appropriate.
 - Cook on the Grill under medium heat, turning frequently for approximately 5-8 minutes.
This dish will serve 3-4 people.
